Tobbouleh

This is Ellie Krieger's recipe.

Bulgur is a whole grain, that has twice the fiber of brown rice. It takes 15 minutes to cook a cup of it when added to 1.5 cups boiling water..
Tabbouleh ingredients:
1 cup bulgur
1.5 cups boiling water
2 cups seeded chopped tomato
2 cups seeded chopped cucumber
1/2 cup chopped red onion
2 cups chopped parsley (I actually put in about 1/4 cup parsley, not 2 cups).
1/3 cup chopped mint

Dressing:
1/3 cup lemon juice i.e. 1 whole lemon juiced
3 TBS olive oil
1 tsp cumin powder (main seasoning!)
salt and pepper

Drizzle dressing on tabbouleh, toss.  Serve in pita or by itself.
